  • 200 grams ground almonds
  • 200 grams white sugar
  • 30 grams all-purpose flour
  • 100 grams olive oil
  • 5 whole eggs

directions

1. Butter a 9” cake pan, then cut a round piece of parchment paper to cover the butter and place it in, “gluing” it to the butter.
2. Beat eggs and sugar together for a few minutes until the mixture becomes paler. Add the olive oil and continue to beat until it is fully incorporated. Add the almond flour gradually, then gradually add the flour. Once the flour is mixed in, pour the batter into the cake pan.
3. Place in a preheated 320˚F oven for 40–45 minutes until a cake tester comes out clean.
