A delicious cake, rich in flavor and with dates. Even people that do not like dates will love this cake. Whipped cream topping sends this dessert right to the top of the list!

ingredients

  • 1-¾ cups dates, pitted & chopped
  • 1 tsp baking soda
  • ¾ cup boiling water
  • cup butter
  • ¾ cup white sugar
  • 2 eggs, beaten
  • 1-⅛ cups self-rising flour
  • ¾ cup packed brown sugar
  • cup butter
  • cup evaporated milk
  • 1 tsp vanilla extract

directions

1. Preheat oven to 350 degrees F.
2. Grease an 8×8 inch baking dish.
3. Combine the dates and baking soda; pour enough boiling water over the dates to just cover them.
4. Cream 1/3 cup of butter and the white sugar until light. Beat in the eggs and mix well to combine.
5. Add the flour and date mixture (including water) to the egg mixture and fold to mix.
6. Pour the batter into the prepared baking dish.
7. Bake in the preheated oven until a tester comes out clean, 30 to 40 minutes.
8. Let cool slightly and prepare the sauce.
9. The Caramel Sauce Topping: Mix the brown sugar, 1/3 cup butter, and evaporated milk in a small saucepan; cook over medium heat and bring to boil.
10. Turn heat down and simmer for 5 minutes, stirring occasionally.
11. Remove from heat and stir in the vanilla. Pour the sauce over individual servings of warm cake.
12. Top with whipped cream.
